You could actually have many more than that!

You have the 3 frequency models

2f models

3f Fakes

3f World Tech Toys

 

and not to be forgotten are the new true radio controlled quadrotors.

So, add that all together, and you can have about a dozen flying at the same time. Each one has slightly different frequencies/pairings, and all work off different remotes. Now that would be a cool thing to see, if you managed to get a well coordinated flying team together to do a coordinated pattern and rc airshow going. That said, you'd really have to put in some SERIOUS work into not only making each heli fly at an almost identical speed, but also painting them to make sure everybody can differentiate their heli out of the dozen. (Though, the quadrotor guy doesn't have that last problem)

I have noticed that a 3 channel transmitter with A, B and C won't fly a Helicopter that came with a 2 channel transmitter with just A and B. 

Are there 5 channels all together or am I wrong?

Could you in theory have 5 IR helicopters flying at the same time?
